Chilli Mud Crab.
When you happen to get your hands on some fresh Muddies, make then into something special that’s pretty much guaranteed to leave you licking your fingers and possibly the bowl!
1 large crab (roughly 1.2kg) per 2 people.
2 tablespoons oil
2cm piece of Ginger finely chopped
3 cloves garlic
3 teaspoons Fat Wren Harissa Paste.
3 spring onions, white part chopped. Green part reserved for serving.
1 bottle of Fat Wren Vampire sauce.
1/2 cup water
1 tsp palm sugar or brown sugar.
2 kaffir lime leaves
1/2 cup fresh coriander leaves (optional)
salt to taste.
Dispatch with a knife or in freezer. Steam for 10 mins, Halve and clean. Remove big claws and crack.
In a large Wok, heat oil and flash fry ginger and garlic.
Add onions and fry for another 30 seconds.
Pour in Vampire sauce, add harissa, sugar then water.
Add crab pieces and sprinkle with lime leaves. Toss to coat well in the sauce then cover, lower heat and steam for 7 mins.
Uncover and remove from heat. Taste and add salt at this point. Stir in fresh Coriander and green spring onions.
Serve with rice or Sourdough for dipping.
