Fat Pizza & Focaccia dough

This dough is super easy either by hand or in a mixer, taking around 5 mins to prepare but don’t forget rising time!

In a large bowl - activate the yeast with 1/3 cup warm water, instant yeast and a teaspoon of sugar.

Add all other ingredients and mix well. 

  • 600g (4 cups) bread flour or pizza flour or plain flour.
  • 2 tsp (6g)  instant yeast 
  • 2.5 tsp (15g) salt/ cooking salt 
  • 4 tsp (20g) white sugar
  • 4 tbsp extra virgin olive oil
  • 330 ml (1 1/3 cups) warm tap water

Cover and allow to rise in a warm spot for 1 hour.

Turn out dough and kneed.

For Pizza - Divide into 3 equal balls, cover and allow to rise for 1/2 hour. Roll out bases and (working quickly) top with favourite pizza toppings.

Cook in a Hot oven 275*C  for 9 - 10mins. (for make ahead pizza bases, do not top!) Cook at 275*C for 2 mins. Let cool, wrap and freeze.

For Focaccia - Use an oiled deep pan and hand stretch dough into the corners. Allow to rise for another hour. Poke dents into the dough and top with salt, olive oil or desired toppings. Cook at 275*C for 12 mins.

For Gozleme -   Divide & Roll into several 20cm rounds. On one round, Top with baby spinach & crumbled feta. Place another round on top. Heat a flat saucepan or bbq plate and olive oil well. Fry on both sides, chop and serve with lemon wedges. For added spice add a little harissa paste!

Generally I would do a triple batch and make multiple colours. Another fun thing  is to add a few drops of essential oils to different colours to make a sensory dough. A few of our favourites are Yellow & Lemon, Green & Eucalyptus

  • 1 cup plain flour
  • 2 tbs cream of tartar
  • 1 cup water
  • 1 tbs oil
  • 3 drops liquid food colouring
