Quickie - Chicken curry recipe- Butter Chicken or Caribbean Curry or Peanut Coconut Satay)

Here’s a quick and easy weeknight recipe for the whole family.

Serves 8.

2 kg of boneless Chicken. (breast or thigh) Cubed. 

2 tablespoon oil

1 jar Butter Chicken simmer paste (alternative Caribbean curry or Peanut & Coconut Satay)

2x can crushed tomatoes.

1 x can coconut cream (or 1 cup cooking cream).

Feel free to add veg if desired.

Heat oil in pan and brown chicken. 

Add the simmer paste, tomato and cream. 

Cover and simmer on a low heat for 15mins, uncover and simmer for a further 10 mins. Serve with basmati rice and naan bread.
